About the recipe
Vanilla sauce is a must for all kinds of pies, for example as for the summer rhubarb pie as in the picture.
But, buying a custard in the store is not ok as it contains a lot of sugar, but it is actually possible to make your own custard which is also really quick to make.
It is not like a real custard that you boil and temper, but this is a quick variant of custard.
In the recipe I use both vanilla powder and vanilla extract and it works well to only use vanilla extract, but I think it's nice if you actually see that the sauce contains vanilla, which you see if you have a little vanilla powder in (you get the little blacks the vanilla dots i).
A matter of taste, of course ... if you do not want it, then you can exclude the vanilla powder and add a little more vanilla extract only.
Then a tip is to taste the amount of vanilla, as it can differ a little between different brands and age of the vanilla.
This is a great low-carb vanilla sauce.

Whisk egg yolks, sweetener and vanilla to a fluffy foam.
Whip the cream lightly in a separate bowl. It should not be whipped hard.
Then mix the cream and egg whisk and taste.
Serve with a good pie!
