About the recipe
These sunflower buns are my first attempt to bake with a brand new flour for me, namely sunflower flour.
What an incredibly good result it was. Without joking, this is the top 3 of all breads I have baked in the low carb world.
I can highly recommend buying some sunflower flour and experimenting with it, but first you should of course bake these buns.
The recipe gives about 7-8 buns.

Set the oven to 390°F. (200°C)
Mix cottage cheese, eggs, water, melted butter and sunflower flour in a bowl and mix it together to a smooth batter.
Then mix the remaining dry ingredients in a separate bowl.
Whisk the dry ingredients into the batter. It should just be mixed quickly.
You can advantageously mix the last with a spatula.
Let the batter stand and soak for 5-10 minutes.
Now shape 7-8 pieces of equal size. You can advantageously moisten your hands with water so it is easier to shape without them sticking to your hands.
Lay them out on a plate with parchment paper, flatten them a little and sprinkle on some sunflower seeds.
Set in the middle of the oven and bake for 22-25 minutes.
Take out and let them cool on a wire rack.
However, be sure to eat one before it cools completely, with plenty of butter on. 🙂
