I really love pickled red onions with grilled stuff and this is something I do very often.
Unfortunately, many pickled things contain sugar, but I just do not think onions need it as it has its own sweetness in it.
This recipe is great for you who eat low carb or keto and you can easily store it in the fridge for up to a week.
Ingredients
Instructions
Peel and slice the red onions into approximately 0.2 inch thick slices.
Chop the garlic and chili and place in a bowl together with the sliced red onion.
Boil water, vinegar and a little salt and pepper. It just needs to boil.
Pour the fluid over the red onion and mix around.
Let sit for at least an hour, but preferably longer.
Serve or pour into a nice glass jar and store in the fridge for later.
