About the recipe

Cowboy soup is an incredibly easy cooked and rich soup that works well with most people.

I saw a recipe online, but soon realised that it wasn’t adjusted to those who eat low-carb, as it contains potatoes.
So I did what I often do - refurnished the ingredients and created a low-carb friendly Cowboy Soup.

So, this is a Cowboy soup without potatoes, so much less carbs.

Hope you’ll enjoy it!

Ingredients

Yields6 Servings
1.30 lbs minced meat/ground beefOr chicken, or pork if you like.
 4.50 oz onion
 3 garlic cloves
 7 oz Swedish turnip
 7 oz black radish
 2 peppers
 3.80 cups water
 2.10 cups cream
 3 tbsp concentrated veal stock
 7 tbsp tomato puree
 1 tbsp dried oregano
 1 tbsp herbal salt
 Olive oil to fry in
 Ground black pepper

Instructions

1

Chop the onion and garlic.
Dice the Swedish turnip and the black radish in 0.2 inch sized dices.
Dice the pepper in equally sized pieces.

2

Fry the minced meat and the onions and garlic in some olive oil. Use a balloon whisk to grind the minced meat when you fry it.
Add some salt and pepper.

3

Add the Swedish turnip, the black radish and the pepper and let it fizzle for a few minutes.

4

Add the rest of the ingredients and let it cook and popple for about 20-30 minutes, until the roots are soft.
Do a taste off with herbal salt and pepper.
