About the recipe

Almond fish is a classic recipe that was given at schools in Sweden. An almond-baked piece of fish, usually saithe or cod.
It is a dish that I think is really good, but it contains breadcrumbs which is not ok for us who eat low-carb or keto, so therefore I have come up with my own variant that works better and is gluten free.
Then I also spiced it up a bit with good parmesan cheese as well.

Which fish you want to use is entirely up to you, I like to use saithe fillet or cod fillet, but I can imagine that you can also do this with salmon if you want. However, the basic idea is to use a white fish.

The recipe is for about 6 people.

Ingredients

Yields6 Servings
 1.80 lbs White fish fillets
 3.60 oz Butter
 0.65 cup Almond flour
 0.42 cup Grated parmesan cheese
 2 tsp Dried oregano
 4 tbsp Fresh chopped parsley
 2 tbsp Squeezed lemon
 2 Garlic cloves (choped/grated)
 1.70 fl oz Water
 Salt
 Ground black pepper
 0.21 cup Planed almonds

Instructions

Heat the oven to 392°F (200°C).

If you have frozen fish, thaw it first. Keep in mind that a lot of weight (water) is lost when it is thawed.

Place the fish fillets in an ovenproof dish. Add a little salt and pepper.

Melt the butter and pull the saucepan aside.

Add almond flour, oregano, parsley, parmesan cheese, lemon juice, water and a little salt and pepper to the butter.
It's going to be like a batter.

Spread the mixture on top of the fish.

Sprinkle with planed almonds.

Set in the oven and bake until you have a beautiful color on the "blanket".
Also check that the fish is ready. It takes about 20-30 minutes depending on the thickness of the fish.

Take out and serve with good sides.
If you like sauce, you can make a good fish sauce, but you can well eat almond fish without any sauce, as it will be a little sauce in the dish.
