These parmesan and garlic baked zucchini are such an incredibly simple and good way to "get rid" of a little zucchini.
If you're just like me growing your own zucchini, then you know that there will be lots all of a sudden and you're trying to figure out what to do.
For me, it was just like that and then I figured out what I could do. It should also suit us who eat low-carb or keto.
I had good parmesan cheese at home and thought I had to use it, so it all resulted in this recipe for parmesan and garlic baked zucchini.
Feel free to try different types of zucchini. I can also imagine that it can work with other aged cheese if you do not have parmesan cheese at home.

Heat the oven to 435°F.
Cut the zucchini into about 0.75 inch slices.
I made 8 slices, but that depends on the size of the zucchini.
Salt them on both sides and place them on a paper towel.
Let them lie there for about 15 minutes to draw out some fluid.
Take some kitchen paper and squeeze out as much liquid as you can.
Place them on a baking sheet with parchment paper on.
Melt the butter, remove the pan from the heat and mix in the garlic, almond flour, parmesan cheese and chopped parsley.
Spread the batter evenly over the zucchini slices and pepper a little on top.
Set in the oven and bake for 12-15 minutes until they have a nice color.
Take out and serve directly to something good, or eat them as they are.
