Chaffles (Cheese waffles) is thus a cheese and egg waffle and it has taken the internet by storm, especially in the US where the recipe has its origins.
In the basic recipe, you use two simple ingredients, eggs and ready-grated mozzarella cheese.
However, you can use any grated cheese.
What matters a bit is what you are going to use your Chaffles for. If you are going to make "sweet" waffles, then feel free to use ready-made mozzarella then, because it is quite as tasteless and not at all as salty as regular cheese.
Should you make a sandwich with a filling in between that is more nutritious, then you can vary your choice of cheese, which will affect the taste in different ways.

Chaffles can be eaten exactly as they are, like a waffle with berries and cream, otherwise you can use it as a type of bread if you want and fill it with lots of good toppings.
Try filling it with mayonnaise, pastrami / ham, cheese, tomato, cucumber and make a double sandwich of it. Awesome!

Which waffle iron?
To get the absolute best results, you should use a waffle iron for Belgian waffles. However, it works to use a regular waffle iron, but then you do not get the thickness you want to strive for.

The thick Belgian waffles in particular help to maintain a possible filling in the holes, so it is definitely worth getting a new waffle iron.

 2 Eggs
 1 cup Shredded mozzarella cheese

Instructions

Turn on your waffle iron so it gets hot.

Whisk together eggs and cheese in a bowl.
To get a little smoother batter, you can mix it all together.

Pour the batter into the waffle iron and bake until the waffle has a nice golden color.
It is batter for about four waffles.

When it has a nice color, lift it off and let it rest for a few minutes to become a little more crispy.

Fill it with what you feel for. Maybe cream cheese, lettuce, cheese, cucumber, tomato and other goodies.
Divide in half and eat.
